The pioneer among luxury hotels in the Los Cabos region of Mexico, One&Only Palmilla is situated on a 250-acre portion of a 900-acre, master-planned community that includes the resort, a 27-hole Jack Nicklaus signature golf course, and eight residential communities set alongside spectacular shoreline.  One&Only Palmilla offers one of the region’s few swimmable beaches and the most stunning views of the extraordinary Los Cabos natural landscape and coastline of any resort in the destination.

In November 2008, One&Only Palmilla completed a $30 million renovation and expansion project introducing 16 new beachfront casitas junior suites and suites with infinity pools and Market by Jean-Georges Vongerichten to replace the existing “C” by Charlie Trotter. In December 2008, the property unveiled the Villa Cortez, a four-bedroom villa complete with 12-person theater and live-in butler quarters.

Don Abelardo Rodriguez, the pioneer of tourism development in Los Cabos and son of General Abelardo Rodriguez, interim president of Mexico, founded Palmilla in 1956 with 15 guestrooms.  Early guests had to arrive by private plane or yacht and the intimate resort quickly became a favorite among celebrities and dignitaries such as John Wayne, Bing Crosby, Lucille Ball and Desi Arnaz, Dustin Hoffman, Ernest Hemingway and President Dwight D. Eisenhower.


One&Only Palmilla offers three restaurants, with a variety of dining options to please every palate.

Michelin-starred chef Jean-Georges Vongerichten recently collaborated with One&Only Palmilla to develop a uniquely original dining concept for Market, his first west coast outpost that opened in November 2008. Unlike any of his existing restaurants, Market features the Jean-Georges signature style blended with traditional Mexican ingredients and accents from One&Only Palmilla. In addition to the Jean-Georges composed dishes, guests enjoy a ‘couture cuisine’ privilege allowing them to customize their cuisine as they prefer. Market, designed by Adam D. Tihany, celebrated for his work at DANIEL, Le Cirque, Per Se and Jean Georges in NYC, replaces the more formal “C” by Charlie Trotter with an understated elegance of warm natural colors and original artwork.  Inspired by contemporary Mexican architecture, design features at Market include: an entranceway encased in amber glass, a grand chandelier and geometric limed oak screens.  Designed to be both relaxed and chic in material and color selections, diners at Market enjoy a selection of custom chairs, banquettes, and rugs that both excite and foster a warm ambiance. The restaurant can accommodate 108 people in the main dining room and 80 people on the outdoor veranda. Market is open to guests for Breakfast from 7AM-11AM and Dinner from 6PM-10PM.

Adjacent to Market, the new space also hosts a Suviche Restaurant & Lounge offering guests an impressive selection of fresh Sushi and a striking presentation of Mexican Ceviches incorporating both local and Asian flavors. Sushi is prepared by a traditional Japanese chef hand selected by Jean-Georges in Tokyo. An extensive tea and sake menu compliments the new cuisine while the introduction of a professional Sake Sommelier assists guests with a recommended sake pairing. Guests of One&Only Palmilla are encouraged to enjoy the neighboring bar for nightly live entertainment to enhance the casually elegant ambiance of the new space. The 28-seat Suviche Restaurant & Lounge is open from 6PM-11PM dinner and up to 1:00 am for entertainment at Lounge area.

Jean-Georges also oversees Breeze, an outdoor terrace café which offers a light menu with everything from quesadillas to cevichés to a variety of sandwiches and salads.  For those who want to dine in the privacy of their spacious guestrooms or suites, round-the-clock room service for the resort is provided by Jean-Georges as well. 

The resort’s third restaurant, Agua, is perched on a bluff with panoramic views of water and the surrounding landscape, adjacent to the resort’s new infinity edge pool.  The menu here is an innovative hybrid dubbed “Mexiterranean,” created by Chef Larbi Dahrouch, a Moroccan-born former protégé of Jean-Louis Palladin.  The palapa-style restaurant and bar, also designed by Adam Tihany, features a decidedly Mexiterranean ambiance, with lively colors, painted Mexican tiles and Moroccan lanterns throughout.

Guests can also enjoy the privacy of a mosaic, moon shaped “Agua Dining Pod” and take pleasure in the star lit Mexican sky while overlooking the azure blue waters of the Sea of Cortez.

Tuesday nights from 6:00pm to 10:00pm, One&Only Palmilla offers La Fonda de la Capilla Antigua where traditional Mexican cuisine is served outside the Palmilla Chapel.  On the chapel steps musicians entertain while guests dine and local artisans showcase their work.  An astronomer is also on hand during La Fonda, atop the Palmilla Chapel to point out stars and constellations through a high powered telescope.

In preparation for guests air travels, One&Only Palmilla offers a selection of “One&Only Air to Go” lunch favorites for “In-Flight” enjoyment.  Choices range from slow roasted pork to marinated grilled arrachera with chipotle aioli and roasted vegetables.  All “One&Only Air to Go” meals come with local fresh seasonal fruits, a gourmet cookie for dessert as well as perfectly paired condiments packed in a re-usable One&Only Palmilla lunch pack.


Accommodations are presented in single-story and three-story buildings, or “casas,” encircling the resort grounds along the peninsula’s edge. Perched above the beach, all 173 casually elegant rooms, suites, and villa offer 24-hour butler service and a patio or balcony facing out towards the sea, allowing optimum privacy and unobstructed scenic views.

The new 680sq. ft – 1780sq. ft Beachfront Pool Casita Junior, One Bedroom and Beachfront Pool Casita Master Suites are among the largest of any resort. Each of the new Casitas boast infinity edge pools.


The 27-hole Jack Nicklaus signature course opened in 1993.  The Palmilla Golf Club has hosted the Senior PGA Tour Senior Slam.  The course (6,900 yards for 18 holes) offers views of the Sea of Cortez from 12 of 27 holes, five sets of staggered tees, stunning fairways, four lakes and challenging shifts in elevation.  The course has been rated as one of the top 100 in the world by Great Golf Resorts of the World.


One&Only Palmilla offers the One&Only Spa with 13 private treatment villas – for either one or two people – allowing guests to enjoy their spa regime in complete sanctuary, whether for a few hours or a half-day.  Each villa features a private, air-conditioned pavilion that opens onto a landscaped open-air garden.  The six deluxe villas offer an outdoor shower, bathtub and thatch-roofed daybed, perfect for relaxing in between or after treatments.  The entire spa is designed in a traditional Mexican style in keeping with the resort.

Guests can choose from a comprehensive menu of ESPA treatments representing a blend of Mexican, Asian and global accents with many of the therapies based on the ancient beauty, healing and rejuvenation secrets of several Asian cultures.  Every detail is an important part of the experience and every sense is indulged, from the rituals that accompany each treatment to the exclusive products using the finest indigenous ingredients, from cactus to lime to Mexican spices.

One&Only Spa at One&Only Palmilla recently unveiled a Moon & Stars Garden which serves as a relaxing space for guests to enjoy after their treatments. The Moon & Stars Garden at One&Only Spa is located near the 13 private spa villas. The space is especially enchanting in the evening, with the stars, glowing lights, natural sounds and aroma from flowers, helping individuals truly unwind.

Meditation and yoga is offered each morning at the Yoga Garden or overlooking the Sea of Cortez.  Personal instruction is available as well as specially-tailored programs and workshops featuring themes such as inner peace, re-balancing body & mind or ancient techniques for lasting wellness among a few of the many options.

Yoga for kids, family yoga and pre-natal yoga is also available.
